How much beef do you get from a cow?

 The average highland steer weighs 900 pounds.  The hanging weight will be about 60-65% of the live weight or   about 540-585lbs.  After aging and butchering, you should get about 55% or 297-322lbs of packaged beef.  The exact amount will vary depending on the cuts you choose.

 

How much freezer space will I need for a quarter beef?

  You will need 4 or 5 cubic feet of space to properly store a 1/4 beef.

 

What is the Meat Processing cost?  

  Beef prices for 2023 are $5.65 per lb of hanging weight for a whole beef. That means that a 1/4 beef that weighs  74-80lbs will cost $418-$452.  What you come home with is a variety of cuts.

Compare our prices to grocery store prices for factory-farmed beef and you will be pleasantly surprised.  Not only are you getting AGED PREMIUM HIGHLAND GRASSFED BEEF, you are getting it at a very reasonable cost.

 

Can you guide me through the process of what to get?

  If you choose a 1/4 beef, the cuts are as listed below.  However, if you choose to purchase a 1/2 or whole beef, we would be happy to go over the cut sheet with you to insure you get exactly what you want.

 

For a 1/4 beef, some of the sample cuts, you could get are the following:

  • Ground Beef

  • Boneless Chuck Roast

  • Rib-Eye Steaks 

  • T-bone Steaks 

  • Sirloin Steaks 

  • Porterhouse Steaks 

  • Short Ribs

  • Sirloin Tip Roast

  • Rolled Rump Roast

  • Round Steaks

  • Bottom Round Roast

  • Stew Meat

  • Soup Bones if requested

  • Dog Bones if requested

  • Organ meat if requested

 ground beef is packaged in 2lb packages

 steaks are 1/2"-1" thick and are packaged 2 steaks per pack

A full 900 lb Steer sample cuts (depending on the butcher) can be

45 lbs-Roasts

140 lbs- Ground Beef

45 lbs-Steaks

8 lbs-Brisket 

25 lbs-Short Plate " Stew, Fajita, Shikabob"

20 lbs-Beef Shank "Osso Bucco"

20 lbs- Ribs

Optional - Heart, Tongue, Ox Tail, Soup/Dog Bones, Liver, and Kidney

A $200 NON-REFUNDABLE deposit is required to reserve your portion for 1/4 beef

A $500 NON-REFUNDABLE deposit is required for 1/2 or whole beef.
