How much beef do you get from a cow?

 The average highland steer will yield about a 500 lb hanging weight carcass.  After aging and butchering, you should get about 275 to 320 lbs of packaged beef.  The exact amount will vary depending on how you choose to have it processed.

 

How much freezer space will I need for a quarter beef?

  You will need 4 or 5 cubic feet of space to properly store a 1/4 beef.

 

What is the cost?  

  Beef prices for 2018 are $3.50 per lb of hanging weight for a whole beef. Price for a 1/2 beef is $3.75, and a 1/4 beef is $4.00.  That means that a 1/4 beef that weighs 125 lbs on the rail will cost $500.  What you come home with is a variety of cuts that weigh around 70 – 80 lbs. 

  So that means your net cost for the beef is around $6.25 per pound.  Compare our prices to grocery store prices for factory-farmed beef and you will be pleasantly surprised.  Not only are you getting AGED PREMIUM HIGHLAND GRASSFED BEEF, you are getting it at a very reasonable cost.

 

HOW MUCH DOES THE PROCESSING COST?

  We have our beef processed at Light Hill Meats who will still age beef the right way and for the proper time.  Our standard process is to allow the beef to hang for 21 days.  The aging process is crucial to a tender and full-flavored cut of beef.

    The processing charge is 1.00 / lb of hanging weight.  For a 1/4 beef that weighs 125, that amounts to around $125.00.  We will pick up your order and you can pick up at the farm or we will deliver to you for a small fee.

Per pound charges are set.  Your actual cost will vary based upon the weight of the animal.

 

Can you guide me through the process of what to get?

  If you choose a 1/4 beef, the cuts are as listed below.  However, if you choose to purchase a 1/2 or whole beef, we would be happy to go over the cut sheet with you to insure you get exactly what you want.

 

For a 1/4 beef, you get the following cuts

  • Ground Beef

  • Boneless Chuck Roast

  • Rib-Eye Steaks 

  • T-bone Steaks 

  • Sirloin Steaks 

  • Porterhouse Steaks 

  • Short Ribs

  • Sirloin Tip Roast

  • Rolled Rump Roast

  • Round Steaks

  • Bottom Round Roast

  • Stew Meat

  • Soup Bones if requested

  • Dog Bones if requested

  • Organ meat if requested

 ground beef is packaged in 1-2lb packages

 steaks are 1/2" thick and are packaged 2 steaks per pack

A full  800 lb Steer sample cuts can be

90 lbs- Chuck "Roasts"

44 lbs-Rib and Ground Beef

65 lbs-Loin "Steaks"

8 lbs-Brisket 

40 lbs-Short Plate " Stew and short ribs"

70 lbs-Round  "Roasts, Tip, Ground Beef"

10 lbs-Flank  "Ground Beef"

A $150 NON-REFUNDABLE deposit is required to reserve your portion for 1/4 beef

A $250 NON-REFUNDABLE deposit is required for 1/2 or whole beef.
